Millet and legume based, light on rice and oil. Hitting high protein on a vegetarian deficit is genuinely hard, so this leans on dal, curd, sundal, roasted chana and soya chunks — the densest protein a Tamil vegetarian kitchen offers. Keerai and vegetables keep the volume up so the deficit does not feel like starving.

Notes that apply to every plan

  • Cook with groundnut or sesame oil and keep it to about 3 teaspoons a day — most of the hidden calories in Tamil cooking come from the oil, not the rice.
  • Drink 3 to 4 litres of water. Buttermilk counts and is worth having in the afternoon heat.
  • Swap white rice for kambu, thinai, varagu or samai at one meal a day. Same comfort, slower release, more fibre.
  • Keep sweets, bakery snacks and fried items to once a week rather than banning them — a plan you abandon in a fortnight helps nobody.
  • If you train in the evening, move the heavier of your two rice meals to after the session.
